Nasi Lemak - Simple n Easy

Nasi Lemak- the simple way
Ingredients
Chilli paste
9-10 dried chillies, soaked in warm water
4-5 cloves of garlic
2 inch ginger, julienned (Blend these 3 to form a paste)
Fish /Chicken fillet
2 cloves of garlic, minced
2 inch ginger, julienned
1/2 tsp tumeric powder
1/2 tsp chilli powder (mix all ingredients with a few drops of water form paste)
1 tbsp of lime juice
1/2 cup peanuts
2 eggs
2 cups rice, washed
1/2 a packet of kara coconut milk
3 cups water
2 pandan leaves, knotted
Sugar
Salt
Oil
Method(chilli paste)
1. Blend the dried chillies, ginger and garlic to form a paste
2. Heat oil in a pan, add in the paste
3. Add sugar to taste, once the oils separates from the paste, set aside
Rice/Nasi
1. Wash the rice, drain and place in rice cooker
2. Add the coconut milk and water
3. Place pandan leaves in the rice cooker
4. Allow to cook
Peanuts
1. In a pan,heat oil and deep fry the peanuts
Eggs
1. fry the egg with the sunny side up
Fillet
1. Mix the tumeric and chilli powder with the garlic, ginger and lime juice
2. Set aside for 1/2 hour
3. Fry in a non stick pan with little oil til cooked
Garnish with spring onions and serve hot!
