Macaroni & Chicken soup
Too many days of not feeling good but i'm back in action now! The trip to kalmar was wasted but luckily the scenery was worth the drive :) The migraine attack on saturday left me in bad shape so finally after 3 days of complete rest i'm feeling good again... Last night i had to prepare dinner twice cuz my poor husband who came home at 430pm devoured the vegetable briyani i had prepared and had to rush back to work for a course which then ended at 7pm.
It was pretty cold yesterday and i was in the mood for something soupy so i made Macaroni & chicken soup! A fairly simple dish and something different from the bland porridge the sick are usually given. It required almost zero preparation except for the blending of the ginger and garlic paste and chopping of the chicken fillet and spring onions.
Ingredients4 cloves of garlic, crushed
2 inch ginger, chopped
chicken, shredded
spring onion, chopped
carrots, julienned
2 - 2.5 L of water
dash of pepper
salt to taste
macaroni (boiled til al-dente)
Method1.Boil 2 - 2.5l of water in a pan
2.Blend the ginger and garlic to form a paste
3.Add the ginger garlic paste to the boiling water
4.Add chicken pieces and carrots
5.Add salt and pepper according to taste
6.Drain macaroni and place in a bowl
7.Pour the soup over the macaroni, garnish and serve hot!
